Savvy meal ideas

"The Everything Healthy Slow cooker cookbook" has some GREAT recipes. Including a healthy chicken tortilla soup number. I made it last week and the savvy family wants more!

Boil quinoa in veggie broth. Once fully cooked add a helping tablespoon (or two) or your favorite hummus. My go to flavor is a spicy red pepper hummus. Mix that in with the quinoa, sprinkle with slivered almonds and for more spice...add some spicy sauce! This is a great protein packed dish and it's easy and great either served hot or cold!

Cut a peach into 8 pieces. Heat 2 tablespoons of butter in the pan. Once the butter has melted add the peaches and liberally sprinkle with lemon juice. I squeezed half a lemon for one peach, a whole lemon for two peaches. Brown on either side, roughly eight minutes. Make sure the peach slice is nice and soft and voila! It tastes like peach pie when hot, or if served cold (aka the next day) it'll taste like peach ice cream!!
